Best way to cook cheap steaks?

Cooking & Recipes Add comments
april72029 asked:

When I buy cheaper cuts of beef, like bottom round, what is the best way to cook it? I want to make it tender and taste good at the same time. Marinating doesn’t usually help, because the steaks always turn out dry and tough to chew. Any advice?

Crock pot and slow cooking is ideal for inexpensive cuts of meat because it is a long, moist cooking method. Thus, providing plenty of time for tenderizing meats.

    Crock Pot Swiss Steak

    1/4 cup Italian dressing
1-2 lbs. chuck steak, cut into 4 or more pieces
    1/4 cup all-purpose flour
1 medium bell pepper, coarsely chopped
    3 Tbsp. tomato paste
    1/2 cup water
    1 beef bouillon cube
1 can crushed or diced tomatoes

1.Heat Italian dressing in a large skillet over medium heat.
2.Coat steak pieces with flour and cook in Italian dressing until browned on both sides.
3.Meanwhile, combine tomato paste, water, beef bouillon and diced tomatoes in a crock pot.
4.Add green peppers and steak pieces.
5.Cover and cook on HIGH for 3 to 4 hours.

Cheap cuts generally benefit from slow/long/moist cooking methods. I would cook it on low as a pot roast or braise it covered . A pressure cooker also does these cuts well.
